Chipotle Cilantro Sauce

This makes a wonderful smoky, heat-packed sauce that is wonderful for fish and steak tacos as well as chicken strips. It also makes a wonderful sauce for sandwiches!
Ingredients
- 2 cups Rough Chopped Cilantro
- 4 cloves Garlic (or To Taste)
- 1 whole Chipotle Pepper (canned), Or More To Taste
- 8 ounces, weight Sour Cream
- 8 ounces, weight Mayonnaise
- 1 teaspoon Sauce Rom Canned Chipotle Pepper, Or More To Taste

Coarsely chop cilantro and garlic. Add to a food processor. Add 1-2 chipotle peppers. Puree until finely chopped. Add sour cream and mayonnaise. Add 1-2 teaspoons of sauce from the can of chipotle peppers. Pulse until smooth. Serve immediately or refrigerate.
I like a bit of heat and I love garlic. You might want to start with 1 chipotle and one teaspoon of the sauce and taste first. If you aren’t a real garlic lover, try 2 cloves. Remember as well that if you refrigerate this sauce overnight, the flavors are going to develop more and may possibly be a bit heavy on the garlic and heat for some. I do not find the garlic or heat overpowering, though.
