Ingredients

  • 3 Tbl Olive Oil
  • 1 lb Ground Turkey
  • Half Onion
  • 2 Garlic Cloves
  • 2 Tbl Chilli Powder
  • 2 Tsp Cumin
  • 2 Bay Leaves
  • 2 Tbl Tomato Paste
  • 3.75 cups of chicken stock
  • 2 14oz cans of Red Kidney Beans
  • salt and ground black pepper
  • 2 Cups Chedder Cheese

Preparation

Step 1

1. Chop onion and garlic and sautee with olive oil. Remove from pot.
2. Brown the ground turkey
3. Add the chilli powder, cumin, chicken stock, tomato paste, and bay leaves. Bring to a boil
4. Reduce heat, cover the pan and simmer for about 45 minutes.
5. Put a quarter of the beans into a bowl/grinder and mash. Stir these into the soup to thicken. Add the remaining beans and simmer for 5 minutes
6. Add cheese to garnish
