FRESH, FAST AND TASTY TALAPIA ( Tom Stemm )
- 1 ) 1 bag fresh spinach
- 2 ) 1 pound of asparagus, (chopped)
- 3 ) 4 frozen Talapia fillets
- 4 ) olive oil
- 5 ) crushed red pepper flakes
Take 2 pieces of foil. Spread spinach evenly on foil pieces. Spread asparagus evenly over spinach. Place 2 frozen Talapia fillets on each. Drizzle - olive oil over fish and spinach mix. Then sprinkle with red pepper flakes. Salt and pepper to taste. Close foil tightly. Bake at 375 degrees for 25 to 30 minutes. Serve over rice.
