Cheddar Horseradish Mashed Potatoes

Ingredients
- 4 cups potatoes, peeled and cubed
- 1/2 cup (1 stick) butter, softened and cut into Tbsp
- 1 tsp salt, and to taste
- 2 heaping Tbsp horseradish
- 1 cup cheddar cheese, shredded

Preparation
Step 1
1. Boil potatoes until very soft and drain off water.
2. Add butter and salt, and mash with a potato masher until desired consistency.
3. Add the horseradish and cheddar cheese.
4. Adjust seasoning to taste.
