Low G.I. Meatloaf

Ingredients

  • 1 1/2 lbs. extra lean ground beef, chicken or turkey
  • 1 cup tomato juice
  • 1/2 cup uncooked rolled oats
  • 1 Omega-3 egg, lightly beaten
  • 1/2 cup onion, finely chopped
  • 1 tbsp. worcestershire sauce
  • 1/2 tsp. salt
  • 1/4 tsp. fresh ground pepper

Preparation

Step 1

Preheat oven to 350F. In large bowl, combine meat, juice, oats, egg, onion, sauce, salt and pepper. Mix lightly but thoroughly. Press mixture into an 8" X 4" loaf pan. Bake for 1 hour or until a meat thermometer inserted into the centre reads 160F. Let stand 5 mins before draining off any juices and slicing.
