Marshmallow Chocolate Chunk Coolies

Ingredients

  • 1 1/2 cups flour
  • 3/4 tsp kosher salt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 stick margarine
  • 24 oz semisweet chocolate, chopped
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 1/4 cup mini marshmallows

Preparation

Step 1

Preheat oven to 350.
Line 2 cookies sheets with parchment paper.
In a large bowl mix together flour, salt, baking powder, and baking soda.
Set aside.
Melt margarine and half the chocolate until smooth. allow it to cool slightly.
Whisk in sugar, eggs, and vanilla until smooth.
Gradually add flour mixture, mixing until just combined (do not overmix).
Fold in marshmallows and remaining chocolate.
Allow to cool for 15 minutes.
Drop Tbsps of dough 2 inches apart on prepared cookie sheets.
Bake for 10-11 minutes rotating baking sheets halfway through.
