Ingredients
- 1 - 8.5 oz. corn muffin mix (Jiffy)
- 1 large eggs
- 1/2 cup nonfat Greek yogurt or lowfat sour cream
- 1 scallions, chopped
- 1 small jalapeno pepper, finely chopped
Preparation
Step 1
Heat oven to 400 degrees. Line a 6 cup muffin tin with liners
Prepare the muffin mix according to package directions, omitting milk and using only the eggs and yogurt. Mix in the scallions and jalapeno.
Divide batter among the muffin cups and bake until a toothpick inserted in the center comes out clean, 15-18 minutes.
