Ingredients
- 4 servings
- 1/2 cup whole-wheat couscous
- 4 ounces crumbled light feta cheese
- 8 pitted nicoise olives
- 2 tablespoons olive oil
- 1/4 cup chopped parsley, plus other herbs of choice
- 1 1/2 cups canned, rinsed garbanzo beans
- 2 tbsp. fresh lemon juice
- 15 cherry tomatoes
- 4 green onions, minced
- 2 stalks of celery, minced
Preparation
Step 1
*Prepare* couscous according to package directions. *In* a medium bowl, place the couscous and remaining ingredients and mix well.
