Banana Bread (Boston Globe Magazine)

Ingredients

  • 1/2 cup (1 stick) butter
  • 1/2 cup sugar
  • 2 eggs
  • 1 1/2 cups mashed bananas (about 4)
  • 1/2 cup chopped walnuts (optional)
  • 2 cups all-purpose flour
  • 1/2 tsp. baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp. salt

Preparation

Step 1

Preheat oven to 350 degrees.

1. Cream butter in a mixing bowl, gradually adding sugar. Beat until light and fluffy.

2. Add eggs, one at a time.

3. Blend in bananas and nuts.

4. Mix flour, baking soda, baking powder and salt together. Add to creamed mixture, beating only until blended.

5. Place batter in a buttered 9x5x3 inch loaf pan.

Bake for 45-50 minutes, or until golden brown.

Cool on wire rack for 10 minutes, and turn out of pan to cool.

Makes 1 loaf.
