Ingredients
- 4 Tbsp. butter
- 1/4 c, flour
- 1/4 teas. salt
- 1 c. milk
- 4 egg yolks
- 4 oz. sharp cheddar shredded
- 1 10 oz. brussel sprouts cooked,drained and chopped(2 cups)
- 4 egg whites

Preparation
Step 1
in a saucepan melt butter blend in flour ,saltadd milk all at once
Cook quickly till thickens
beat egg yolks
stir in hot mixture into egg yolks return to hot mixture
stir in cheese and sprouts
cheese should melt
Remove from heat
Beat egg whites till stiff ,fold into mixture
bake 350 for 35 min. in ungreased souffle dish
