Easy Frittata

Ingredients

  • 1 cup sliced vegetables(onion, tomato, and zucchini)
  • 1 egg
  • 2 egg whites
  • salt and pepper to taste
  • 1 tbsp. crumbled feta or grated Parmesan

Preparation

Step 1

Preheat oven to 350 degrees. Coat a small nonstick oven proof pan with cooking spray and saute veggies over medium heat. Whisk together the next 3 ingredients (through salt and pepper); pour into pan, and stir until slightly solidified. Bake 15 - 20 minutes or until almost firm. Sprinkle frittata with cheese and bake until firm; serve.
