Quiche - Asparagus

Ingredients
- 1 lb. fresh asparagus, cut into 1/2 inch pieces
- 10 slices bacon
- 1 egg white beaten lightly
- 4 eggs
- 1 &1/2 cups (12oz.) half and half cream
- 2 cups (16 oz.) Swiss or other cheese
- 2 - 9 inch pie crusts

Preparation
Step 1
Steam asparagus until tender but firm (5 minutes). Cool
Cook bacon and crumble
Brush pie shells with egg white and sprinkle bacon and asparagus onto shells.
Sprinkle cheese over asparagus
Beat eggs, cream, nutmeg, salt/pepper and pour on top of cheese
Bake at 400 degrees for 35-40 minutes, until firm.
