Ingredients
- 3 large egg yolks
- 1 tsp water
- 1/4 tsp sugar
- 3/4 cup unsalted butter, cut into small pieces and chilled
- 1/2 tsp kosher salt
- 2 tsp lemon juice
- 1/8 tsp ground cayenne pepper
Preparation
Step 1
1) Put 1 inch of water in a large saucepan over medium heart and bring to a simmer. Once simmering, reduce the heat to low.
2) Place the egg yolks and 1 teaspoon water in a medium mixing bowl and whisk until it lightens in color, 1 to 2 minutes. Add the sugar and whisk for another 30 seconds.
3) Set the bowl over the simmering water and whisk consistently for 3 to 5 minutes, until there is a clear line that is drawn in the mixture when you pull your whisk through or the mixture coats the back of the spoon.
4) Remove the bowl from over the pan, gradually add the butter, one piece at a time, and whisk until all of the butter is incorporated. Place the bowl back over the simmering water occassionally so it will be warn enough to melt the butter. Add the salt, lemon juice, and cayenne. Server immediately or hold in a Thermos to keep warm.
