Shortbread Cookies

I love these. My favourite from day one. Rich and buttery. Tender to eat. Simple to make. I could double and triple the recipe.

Ingredients

  • 1/2 cup cornstarch
  • 1/2 cup icing sugar
  • 1 cup sifted all purpose flour
  • 3/4 cup butter

Preparation

Step 1

Preheat oven to 300 degrees.
Sift cornstarch, icing sugar and flour together.
Blend in butter with a spoon until a soft, smooth dough forms.
Shape dough into one inch balls and place 1.5 inches apart on an ungreased cookie sheet.
Flatten gently with a fork that is lightly floured to prevent sticking.
Bake 20 - 25 minutes or until edges are lightly browned.

*if dough is too soft to handle, cover and chill for 1 hour.
