  • 3 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups oil
  • 2 1/2 cups sugar
  • 5 eggs
  • 1 cup milk
  • 1 Tbsp coconut flavoring
  • 1 cup coconut (plus extra)
  • 1 1/2 cups sugar
  • 3/4 cup boiling water
  • 3 tsp coconut flavoring

Step 1

Sift flour, baking powder, and salt and set aside. Cream oil and sugar well. Add eggs, one at a time. Add dry ingredients, alternatively with milk, beating smooth each time. Stir in coconut and flavoring. Grease fluted pan, cover bottom with coconut, pour in batter, and sprinkle more coconut over batter. Start cake in cold oven and bake at 325 degrees for 80 minutes. Poke holes in warm cake with toothpick. Boil glaze ingredients for one minute. Pour 3/4 cup liquid over cake and bake for 3 minutes. Pour remaining liquid over cake. Cool.
