Ingredients

  • 6 eggs
  • 1/2 cup milk or cream
  • 1/2 cup grated Parmesan
  • 1 tbsp. flour
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 cup grated cheddar or swiss cheese
  • 1/2 cup chopped cooked broccoli
  • 2 tbsp. chopped fresh parsley
  • 3 cups cooked vermicelli noodles, cut up
  • 1 tbsp. butter or oil

Preparation

Step 1

In large bowl, beat eggs with milk, cheese, flour, salt and pepper. Add cheese, broccoli, parsley and vermicelli. Heat butter in pan. Add egg mixture. Cook until bottom is set, ~5 mins., gently shaking to rotate uncooked egg to the bottom. Place under broiler for a few mins. to set top. Or, slide onto a plate and invert back into pan to cook. Cut into wedges and serve
