THERESA'S CANNED TOMATOES ( Theresa Tite)
- 1 ) bushel tomatoes (more or less)
- 2 ) 1 teaspoon canning salt (per jar)
First wash and sterilize your jars. Put new lids in pan on stove turn on low temp to sterilize and seal jars. Bring a large pan of water to a boil. Take pan off stove. Drop whole tomatoes into boiling water. Let stand approximately 2-3 minutes. Skins will then slip off tomatoes. Core and cut tomatoes into quarters. Put tomatoes in large pan, bring to a boil and simmer for 10 minutes. Fill jars up to 1/2 inch from top and add 1 teaspoon canning salt to each jar. Put lids and rings on jars and close tightly. Set aside with 2-3 inches of space between jars and let cool. You will hear a popping noise as jars cool and seal. Store in a cool dark place.
