Ingredients
- 1 tsp olive oil
- 1 small shallot, minced (about 1 tbsp)
- 2 garlic cloves, minced
- 1/2 tsp minced canned chipotle chiles in adobe sauce
- 1 c. orange juice
- 1/3 c. dried apricots, chopped fine
- 1 orange, peeled and cut into 1/2" pieces
- 1 tbsp minced fresh cilantro
- Salt and pepper
Preparation
Step 1
Heat the oil in a small saucepan over medium heat until shimmering. Add the shallot and cook until softened, aobut 2 minutes. Stir inthe galric and chiptles and cook until fragrant, aobut 30 seconds. Stir in the orange juice and apricots, bring to a simmer, and cook until the apricots are plump and the sauce measures 3/4 c, 3-5 mintues. Off the heat, sitr in the orange pieces and cilantro, and season with salt and pepper to taste.
