- BREAD:
- 1 1) 1 1 loaf of crusty Italian bread
- 2 2) 2 2 tablespoons extra virgin olive oil

Step 1
BREAD TOPPING:
1) 5 plum tomatoes
2) 1 tablespoon extra virgin olive oil
3) 1 teaspoon dried oregano
4) 1/2 teaspoon salt
5) 1 cup shredded parmesan cheese
6) 1 teaspoon balsamic vinegar
7) 1 garlic clove, minced
8) 1/4 teaspoon freshly ground black pepper
Add tomatoes, cored, seeded and diced into half-inch slices. Mix the tomatoes, 1 tablespoon olive oil, vinegar, oregano, garlic, salt and pepper in a bowl. Let stand at room temperature for about an hour for the flavors to blend. Arrange the bread slices on a platter with the oiled sides up. Top each slice with tomato mixture, sprinkle cheese and serve immediately.
