Fried Egg Sandwich

This is my Dad's recipe that he liked to make us on Saturday mornings when I was growing up in the Midwest.

Ingredients

  • 2 eggs
  • 1/8 cup milk
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1 Tbsp butter

Preparation

Step 1

Heat the butter in a medium sized skillet over MEDIUM heat. Add all of the ingredients to a bowl and whisk together to make an egg wash. Pour the egg mixture into the heated skillet and cook on MEDIUM heat for 5 minutes. Flip the eggs over and continue cooking for an additional 3 minutes on the second side. Fold the eggs in half and then half again to resemble a rounded edged pocket. Place the folded eggs onto a piece of bread. Add butter to the top slice of bread and lay the second piece of bread over top of the eggs. Serve the sandwich hot.
