Ingredients

  • 1/2 cup strawberry preserves
  • 1 1/2 pkgs mini tart shells (phi-lo)(6.3oz)
  • 1 8oz. pkg marscapone cheese, softened
  • 1/4 cup lemonade
  • 2 tbs. fresh lemon juice
  • 3/4 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 tsp lemon extract
  • 2 qts. fresh strawberries

Preparation

Step 1

place about 1/2 tsp. preserves on bottom of each tart shell-set aside

in a med. bowl, combine cheese, lemonade and lemon juice. beat on med. speed till creamy.

in a med. bowl, combine the cream and lemon extract and sugar and beat till medium peaks form. fold into marscapone mixture. stirring till combined.

spoon about 1 tbs. marscapone mixture into each shell. top with strawberry half.

chill and serve.
