Ingredients
- 8 oz orzo
- 2 shallots
- 12 oz snow peas
- 8 oz sliced fresh mushrooms
- 1/4 pine nuts
- 1 T olive oil
- 2 T butter
- Sweet red peppers, chopped, to taste
- S&P
Preparation
Step 1
Cook orzo according to package. Drain.
Cook shallots, snow peas, mushrooms and pine nuts in olive oil until vegetables are tender.
Add orzo and butter. Top with sweet red peppers. Add S&P, to taste.
