Ingredients
- 2 3/4 cups whole wheat pastry flour or white wheat flour
- 1 tsp salt
- 2 Tbsp baking powder
- 3 Tbsp sugar
- 2 cups pumpkin puree
- 2 eggs
- 4 tsp vanilla extract
- 2 1/2 cups nonfat milk
- 1 Tbsp pumpkin pie spice
Preparation
Step 1
In a large bowl, combine flour, salt, baking powder and sugar, whisk to combine.
In a second large bowl, whisk together pumpkin, eggs, vanilla, milk and pumpkin pie spice.
Add the wet ingredients to the dry, stirring with a spoon.
Heat a nonstick electric griddle over medium heat until hot (or a regular frying pan will do). Scoop batter by heaping ⅓ cups, using the back of the measuring cup to spread the batter (it will be thick). Cook pancakes 3-4 minutes or until bubbles form on the surface; flip and cook an additional 1-2 minutes. Serve hot.
