Grilled Chicken Salad

Ingredients

  • 2 (6 oz) skinless boneless check breast halves
  • 3 cups mixed salad greens
  • 1 small tomato, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup shredded reduced fat cheddar cheese
  • 1/4 cup sliced ripe olives
  • 2 green onions, chopped.
  • 2 T chopped walnuts
  • Dressing of choice.

Preparation

Step 1

1. Grill chicken
2. divide salad between two plates.
3. top with tomato, cranberries, cheese, olives, onions and walnuts.
4. Slice chicken and arrange over salads
5. Add your dressing of choice.
