Ingredients

  • COOKIES
  • 2 1-ounce sqaures unsweetened baking chocolate
  • 1/2 cup (1 stick) butter at room temperature
  • 2/3 cup brown sugar, firmly packed
  • 1/3 cup white granulated sugar
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tbsp. red food coloring
  • 3/4 cup sour cream
  • 2 cups flour (pack it down in the cup)
  • 1 cup (a 6-ounce package) semi-sweet chocolate chips
  • CREAM CHEESE FROSTING
  • 1/4 cup (1/2 stick) softened butter
  • 4 ounces softened cream cheese
  • 1/2 tsp. vanilla extract
  • 2 cups powdered sugar

Preparation

Step 1

1. Preheat oven to 375 and place rack in middle.

2. Line cookie sheets with parchment paper. Spray the parchment paper with Pam.

3. Unwrap the squares of chocolate, break them apart. Put them in a small microwavable bowl or measuring cup and melt for 90 seconds on High. Stir them until they are smooth and set them aside to cool.

4. Combine the butter, brown sugar and white sguar in the bowl of an electric mixer. Beat them on medium speed until they are smooth.

5. Add the baking soda and salt, and beat on medium for another minute.

6. Add the egg and beat on medium until the batter is smooth. Then add the red food coloring and mix for about 30 seconds.

7. Scrape the bowl down, add the melted chocolate and mix again for another minute on medium.

8. Scrape the bowl, add in half the flour and mix on low. Then add the sour cream. After that, add the SECOND half of the flour until it's fully incorporated.

9. Stir the mix with a spoon and then mix the chocolate chips in by hand.

10. Use a teaspoon to spoon the dough onto the parchment paper, about 12 cookies a sheet.

11. Bake the cookies at 375 for 9 to 11 minutes.

12. Slide the parchment from the cookie sheets and onto aa wire rack to cool. When all cookies are cooled, peel them off the parchment and put on waxed paper for frosting.

FROSTING

1. Mix the softened butter with the softened cream chjeese and vanilla until the mxture is smooth. BE SURE ALL INGREDIENTS ARE ROOM TEMPERATURE, it makes it easier.

2. Add the powdered sugar in 1/2 cup increments until frosting is of proper spreading consistency. (You should use all, or almost all, of the frosting.)
