Pork Loin with White Beans

  • 3 Garlic Cloves - minced
  • 2 Oranges - zest of
  • 1 Tbsp fennel seeds
  • 1 1/2 Tbsp chopped fresh rosemary
  • 1 Tbsp olive oil
  • Salt and pepper to taste
  • 1 Pork Loin - about 2 lbs - leave thin layer of fat attached
  • 2 cans white beans - Great Northern - drained
  • Juice of One Lemon



Step 1

Preheat oven to 450
Combine garlic, orange zest, fennel seed, 1 Tbsp rosemary, and oil in a paste
Season pork with paste by rubbing all over, let marinate up to 4 hours
Cook until 160Deg
In sauspan, heat beans, lemon juice, and remain rosemary. Season with salt and pepper
Slice pork and serve
