Pork Loin with White Beans

Ingredients
- 3 Garlic Cloves - minced
- 2 Oranges - zest of
- 1 Tbsp fennel seeds
- 1 1/2 Tbsp chopped fresh rosemary
- 1 Tbsp olive oil
- Salt and pepper to taste
- 1 Pork Loin - about 2 lbs - leave thin layer of fat attached
- 2 cans white beans - Great Northern - drained
- Juice of One Lemon

Preparation
Step 1
Preheat oven to 450
Combine garlic, orange zest, fennel seed, 1 Tbsp rosemary, and oil in a paste
Season pork with paste by rubbing all over, let marinate up to 4 hours
Cook until 160Deg
In sauspan, heat beans, lemon juice, and remain rosemary. Season with salt and pepper
Slice pork and serve
