Ingredients

  • always wash quinoa prior to cooking to remove bitter coating. cover quinoa in bowl with water and massage, drain, repeat.
  • combine one part quinoa with 2 part water or broth. bring to full boil, reduce heat, cover and simmer 10 minutes. turn off heat but leave covered on burner another 5-10 minutes.
  • quinoa cooks to three times it's original size.

toasted quinoa with kale and pine nuts- recipe

1 c quinoa
salt and pepper
2 T evoo
1 3/4 c boiling water
3 cloves garlic, minced
4 c chopped kale
1 T lemon juice
1/3 c pine nuts


dry toast 1 c. triple washed and drained quinoa in skillet, stirring until golden and fragrant, about 6 minutes. transfer to medium saucepan; add 1/2 tsp salt, 1 T evoo and 1 3/4 c boiling water. reduce heat to low, cover and simmer 20 minutes. let stand 5 minutes, fluff with fork. in skillet over medium high heat add 1 T evoo and 3 cloves garlic, minced saute 30 seconds. add 4 c chopped kale leaves, saute until deep green and tender, 3-4 minutes. stir in cooked quinoa, 1 T lemon juice, 1/3 c toasted pine nuts, salt and pepper to taste.
