Ingredients

  • GLAZE:
  • 2-1/2 cups all-purpose flour
  • 1/3 cup sugar
  • 1-1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 6 Tbsp cold butter, cut into pieces
  • 3/4 cup diced fresh strawberries
  • 3/4 cup fresh blueberries
  • 1-1/2 tsp lemon zest
  • 1/2 cup buttermilk
  • 1/4 cup light corn syrup
  • 2 Tbsp corn oil
  • 1 tsp pure vanilla extract
  • 1 egg, slightly beaten
  • 1/2 cup powdered sugar
  • 1 tsp light corn syrup
  • 1/4 tsp pure vanilla extract
  • 1 to 3 tsp milk

Preparation

Step 1

1. Preheat oven to 400F.
2. Stir together flour, sugar, baking powder, baking soda and salt in a large bowl.
3. Cut cold butter into flour mixture with a pastry blender or two knives until mixture resembles coarse meal. Stir in strawberries, blueberries, and lemon zest.
4. Combine buttermilk, corn syrup, oil, vanilla and egg in a small bowl. Make a well in the center of dry ingredients and add buttermilk mixture, stirring until just combined. Do not over mix.
5. Divide the dough in half. (Dough will be sticky). Place each half on a lightly greased or parchment paper lined baking sheet. Pat each into a 6-inch disk with floured hands.
6. Bake for 14 to 18 minutes, or until edges are golden brown. Let cool for at least 5 minutes.
7. Whisk glaze ingredients in a small bowl until smooth. Drizzle glaze over the scones. Slice into wedges and serve.

TIP: Sprinkle coarse sugar on scones just before baking for added texture.
