Pineapple Cookies

These pineapple cookies are delectable! The perfect combination of sweet and tart.

Ingredients

• 1 cup shortening
• 1 1/2 cup sugar
• 1 egg
• 1 can crushed pineapple with juice
• 3 1/2 cups flour
• 1 teaspoon soda
• 1/2 teaspoon salt
• 1/4 teaspoon nutmeg
• 1/2 cup chopped nuts

Preparation

Step 1

Mix shortening, sugar, and egg together.

Stir in pineapple. Measure flour by dipping method.

Stir together flour, soda, salt and nutmeg, blend in mixed nuts. Chill at least 1 hour.

Heat oven to 400° F.

Drop rounded teaspoon of dough 2" apart on lightly greased cookie sheet. Bake 8-10 minutes or until no imprint remains.
