Tuscan Sausage

Ingredients

  • 14 oz ground pork
  • 2 oz salt pork, fat part only, minced
  • 1/4 cup finely chopped unseasoned, olive oil packed sun dried tomatoes
  • 1/3 cup lightly packed, coarsely grated mozzarella cheese
  • 1 small clove garlic, minced
  • 1 T chopped fresh basil leave
  • 2 t's chopped fresh flat leaf parsley leaves
  • 1/2 t freshly ground black pepper
  • 1 t kosher salt (or to taste)

Preparation

Step 1

1. Place all ingredients (except salt) in a medium bowl and knead with your hands until thoroughly blened. Cook and taste a small sample, then add salt if you desire. Cover the mixture and refrigerate for min 4 hours.

2. Stuff into casings or form into meat ball or meat patty (uncooked sausage will keep for 3 days only in the refrigerator.

NOTE: IT DOES NOT FREEZE WELL!
