Pastry Cream

Ingredients

  • 1 cup milk
  • 1/4 cup sugar
  • 2 egg yolks
  • 3 tbs sugar
  • 3 tbs cornstarch
  • 1/4 tsp salt
  • 2 tbs butter
  • 1/2 tsp vanilla

Preparation

Step 1

In a small saucepan combine milk and sugar; cook over medium heat until bubbly on edges. Meanwhile, in a medium mixing bowl beat 2 egg yolks, 3 tbs sugar, 3 tbs cornstarch and 1/4 tsp salt until combined. Gradually beat in 1/3 cup hot milk mixture. Return to saucepan; cook and stir over medium heat until mixture thickens and comes to a boil. Remove from heat; stir in 2 tbs butter and 1/2 tsp vanilla. Transfer to bowl. cover.

Brush on bottom of pies.
