Red Bean Salad

Ingredients

  • 2 slices thick cut bacon cut in 1/2 inch dice
  • 2 tbsp peanut or vegetable oil
  • 1/2 cup 1/4 inch diced yellow onion or sweet onion
  • 1/2 cup 1/4 inch diced celery
  • 1/2 cup 1/4 inch diced red pepper
  • 1 can 16 oz red beans rinsed
  • 1 can 16 oz pinto beans rinsed
  • 2 tbsp creole or dijon mustard
  • 2 tbsp granulated sugar
  • 1 tbsp cider vinegar
  • 1/2 tspn tobasco sauce
  • 1/4 tspn kosher salt
  • 3 tbsp fresh chopped parsley

Preparation

Step 1

In a 10" skillet cook bacon with oil --2 minutes stirng occasionally

add onion and cook until translucent 3 to 4 minutes stirring occasionally

add celery and peppers and cook 2 to 3 minutes --stir occasionally

Add remaining ingredients except parsley and mix well---cook for 5 minutes stirring occasionally

remove skillet from heat and let salad cool to room temperature

Adjust seasoning with salt if needed

Garnish with parsley
