CRAB SALAD MELTS WITH GREEN OLIVES

Ingredients

  • 2 pkgs (each 7 oz) frozen crab-meat, thawed
  • Half of sweet red pepper, diced
  • 1 green onion, sliced
  • 1/4 cup mayonnaise
  • 2 tbsp minced green olives
  • 1 tbsp Dijon mustard
  • 1/2 tsp paprika
  • Pinch each salt and pepper
  • 4 slices whole grain pumpernickel bread
  • 1/2 cup shredded Swiss or Cheddar cheese

Preparation

Step 1

Place crab-meat in sieve; pick through to remove any cartilage. Press firmly to remove liquid. Transfer to large bowl; add red pepper, green onion, mayonnaise, olives, mustard, paprika, salt and pepper. Mix until combined.

Meanwhile, toast bread in toaster or toaster oven. Place toast on rimmed baking sheet. Spread crab mixture over toast; sprinkle with cheese.

Place baking sheet about 6" below broiler; broil until cheese is melted, about 2 minutes.
