Ingredients
- 4 Cups cooked and diced chicken
- 2 Lg. carrots thinly sliced
- 8 oz. sharp cheddar cheese shredded
- 1/4 cup butter
- 1/4 cup flour
- 1 cup chicken broth
- 1 small jar of diced pimentos
- Topping
- 1/4 cup butter
- 1 8 oz. pkg. of stuffing mix

Preparation
Step 1
In a small sauce pan cook the sliced carrots in 1 cup of chicken broth just until tender, do not over cook.
Drain and reserve the chicken broth
In sauce pan add 1/4 cup butter and 1/4 cup flour to ma a roux, add reserved broth until thickened
Lower head and add shredded cheese. Stir until melted
Add the drained carrots, 4 cups of diced chicken and the drained pimentos
Pour into a casserole dish.
FOR TOPPING:
Melt butter and stir in stuffing mix until coated. Sprinkle over top of casserole.
Bake at 350 until bubbling and topping is golden brown.
