Ingredients

    Cups cooked and diced chicken

  • 2

    Lg. carrots thinly sliced

  • 8

    oz. sharp cheddar cheese shredded

  • ¼

    cup butter

  • ¼

    cup flour

  • 1

    cup chicken broth

  • 1

    small jar of diced pimentos

  • Topping

    cup butter

  • 1

    8 oz. pkg. of stuffing mix

Directions

In a small sauce pan cook the sliced carrots in 1 cup of chicken broth just until tender, do not over cook. Drain and reserve the chicken broth In sauce pan add 1/4 cup butter and 1/4 cup flour to ma a roux, add reserved broth until thickened Lower head and add shredded cheese. Stir until melted Add the drained carrots, 4 cups of diced chicken and the drained pimentos Pour into a casserole dish. FOR TOPPING: Melt butter and stir in stuffing mix until coated. Sprinkle over top of casserole. Bake at 350 until bubbling and topping is golden brown.
