Ingredients
- 4 med chicken breasts
- 1/4 C flour
- 4 T olive oil
- 3 medium pears, cored and cut into wedges. Do not peel
- 3 green onions
- 1 t garlic
- 1 C apple juice or apple cider
- 1/2 C cranberries dried
- 1 t thyme
Preparation
Step 1
Season chicken with salt & pepper. Dip chicken in flour and brown 2 min on each side. Finish baking in the oven until chicken is 165 degrees. Saute pears, green onion and garlic in oil until tender. Reduce heat and add the remaining ingredients. Simmer uncovered until slightly thickened. Remove chicken from oven and spoon pear mixture over chicken breasts.
