Spring Peas with Mint

Ingredients

  • 2 T olive oil
  • 1 T red wine vinegar
  • 2 C fresh peas
  • 1/2 small red onion, diced
  • 1 C loosely packed mint

Preparation

Step 1

In bowl, whisk olive oil with vinegar. Add peas, red onion & mint. Toss to coat. Season with salt & pepper. Let stand 1 hr. before serving.
