Ingredients
- 5 Big onions
- 21 Hot peppers, your choice, chopped up
- 1 head garlic run through press or minced (note head not clove!)
- 1 Teaspoon or more of whole cumin seeds groud up with mortar and pestle
- Fresh cilantro to taste
- Salt to taste
- 15 tomatillos
- 9 big tomatoes or 21 pear/paste tomatoes such as Roma
- 5 Whole dried chiles or chipotles
- 1 Tablespoon of wine vinegar
Preparation
Step 1
For the tomatillos - boil until soft, remove from water and puree when cool.
For the tomatoes - boil for a minute or two, remove from water, put them in cold water, remove the skinds when cool and chop them up.
For the whole dried chiles - boil until soft, remove form water and puree with 1 tablespoon of wine vinegar
Fry the onions and hot peppers in some olive oil until kin dof soft, not limp though. Turn off the heat and add the garlic, cumin, cilantro and salt. Add this mixture to all the rest of the stuff and you got salsa.
