Ingredients
- 4 Chicken Thighs
- 1 lb. Sausage Cut into 1-inch cubes
- 3 Cups Chopped Onions
- 1 1/2 Cups Finely Chopped Bell Peppers
- 1 1/2 Cups Finely Chopped Celery
- 1/2 Cup Finely Chopped Parsley
- 1/2 Cup Finely Chopped Green Onions
- 3-4 Bay Leaves
- 4 tbsp. Garlic
- 4 tbsp. “Joe’s Stuff”
- 3 Cups Rice-Converted
- 3 3/4 Cups Rich Chicken Stock
- 2 tbsp. Kitchen Bouquet
Preparation
Step 1
• Season Chicken with “Joe’s Stuff”
• Melt lard or oil in large skillet.
• When it begins to shimmer, add chicken and sausage.
• Satue until chicken begins to brown slightly.
• Remove from skillet and place in crockpot.
• In same skillet with the oil from browning, sauté: onions, peppers, celery and herbs.
• When onions are transparent, add garlic and seasonings.
• Cook for 2 minutes, then add to crockpot.
• Add rice, hot chicken stock and kitchen bouquet and mix.
• Cook on high for 3 hours and low for 6 hours.
