- 5 cups fresh Morada Produce cherries, pitted and halved
- 1 cup cherry preserves, warmed
- 1/4 cup orange liqueur
- 2 tsp finely shredded orange peel
- 1 tsp fresh lemon juice
- 2/3 cup sugar
- 2 cups all-purpose flour
- 2 cups cake flour
- 4 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 3/4 cup chilled butter, cut into 1/2-inch pieces
- 1 cup chilled plain yogurt
- 2 large eggs, beaten
- Whipped cream
Preparation
Step 1
In a bowl, combine cherries, warmed preserves, liqueur, orange peel and lemon juice. Refrigerate for 1-2 hours.
Preheat oven to 400 F.
In a bowl, combine sugar, flours, baking powder, baking soda and salt. Cut in butter. Mix yogurt with eggs, then stir into dry ingredients just until moistened.
Knead dough on a lightly floured surface until it just holds together. Roll out dough to 1-inch thickness. Using a 3-inch cookie cutter, cut out 10 biscuits. Place on an ungreased baking sheet. Brush with egg wash if desired.
Bake for 18 minutes, or until lightly golden. Serve warm or at room temperature.
Cut biscuits in half horizontally. On each biscuit bottom place whipped cream, cherries, biscuit top, whipped cream and cherries.
