Think Pink Cookies

Ingredients

  • 6 packets Sweet'N Low zero calorie sweetener
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter or margarine, softened
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 5 to 7 drops red food color (optional)
  • 1 1/2 cups all-purpose flour
  • 1 1/4 teaspoons baking powder
  • 1/4 tsp salt

Preparation

Step 1

Place Sweet’N Low, sugar and butter in a mixer bowl and beat until creamy.

Add egg, vanilla and food color (to make cookies pink) and blend.

Add dry ingredients and beat at medium speed just until combined.

Wrap dough in plastic wrap and chill for at least 3 hours or overnight.

Preheat oven to 350 F.

Divide the cookie dough in half. On a well-floured surface, roll out each portion of dough to approximately 1/8-inch thickness. Cut into shapes with cookie cutters.

Bake on an ungreased cookie sheet for 8 to 10 minutes, or until the edges are lightly browned.

Let cool for 2 minutes before removing to a rack.
