Tomato and Watermelon Salad with Feta and Oregano

Ingredients

  • 2 large ripe tomatoes
  • 1/4 of a small watermelon,cut into pieces (3 cups)
  • 2 T olive oil
  • 2 t red wine vinegar
  • 1/2 t kosher salt
  • 1/4 t black pepper
  • 4 oz feta cheese
  • 8 calamata olives, sliced
  • 3 T sliced red onion
  • 1/2 t mexican oregano (optional)

Preparation

Step 1

Combine tomatoes and watermelon in shallow bowl.
Drizzle with oil and vinegar and sprinkle with salt and pepper.
Toss gently.
Strew feta, olives, and red onion over salad.
