Ingredients
- 2 large ripe tomatoes
- 1/4 of a small watermelon,cut into pieces (3 cups)
- 2 T olive oil
- 2 t red wine vinegar
- 1/2 t kosher salt
- 1/4 t black pepper
- 4 oz feta cheese
- 8 calamata olives, sliced
- 3 T sliced red onion
- 1/2 t mexican oregano (optional)
Preparation
Step 1
Combine tomatoes and watermelon in shallow bowl.
Drizzle with oil and vinegar and sprinkle with salt and pepper.
Toss gently.
Strew feta, olives, and red onion over salad.
