MUSHROOM****Michael Symon's Portobello Blue Cheese Sandwich

Ingredients
- 1 large Portobello Mushrooms
- 1 1/4-inch thick slice red onion (don't leave this out)
- 1/2 tbsp. Extra Virgin Olive Oil
- few drops quality Balsamic Vinegar
- Kosher Salt and freshly ground Pepper
- 1 ounce Buttermilk Blue Cheese, crumbled (blue cheese butter log works well)
- 1 whole grain kaiser rolls, split and toasted
- 1 cup loosely packed Arugula
Preparation
Step 1
* Preheat a grill or grill pan or non-stick frying pan to medium-high heat. Add a drizzled of EVOO and the onion slices, seasoning with salt and pepper and cook for a few minutes on each side until soft and starting to char. Remove and set aside.
* To clean the portobello, remove the stems and scrape out the gills using a spoon.
* Put the mushrooms in the pan, along with Dan's burger patty, and cook until the mushroom softens. Flip the mushrooms and drizzle with a bit of balsami, and cook uncovered for 1 minute.
* Remove from the heat and top the mushroom with the blue cheese butter.
* Put an onion slice onto the bun, top with a mushroom, 1/2 cup arugula, and serve.
