Brown Butter Sauce

Ingredients

  • 6 T butter
  • 1 T tarragon vinegar
  • 1 T lemon juice
  • 2 T's tarragon or chervil
  • Fresh ground pepper
  • pinch of salt if using sweet butter

Preparation

Step 1

Make the butter sauce in the same pan as the fish was cooked.

Heat butter in the skillet over med heat until it turns light brown. Add the chopped tarragon, the tarragon vinegar and lemon juice. All the while scraping any bits of fish and stirring vigorously - this creates acid and an emulsion so every bit of sauce will be balanced.
