Creamy Pesto Dip

For an accurate measrement of boiling water, bring a kettle of water to a boil, then measrue out the desired amount. Cherry tomatoes pair beautifully with the bright basil flavor in this dip.

Ingredients
- 8 oz. 1% cottage cheese (about 1 c)
- 1/4 c. boiling water
- 1 c. low-fat sour cream
- 1/3 c. grated Parmesan cheese
- 1/4 c. finely chopped fresh basil
- 1 tbsp olive oil
- 1 garlic clove, minced
- Salt and pepper
Preparation
Step 1
Process the cottage cheese and boiling water together in a blender until completely smooth, about 1 minute. Transfer the mixture to a medium bowl, then whisk inthe sour cream, Parmesan, basil, oil and garlic. Season with salt and pepper to taste. Cover and refrigerate until the flavors blend, at least 1 hour or up to 3 days. Serve
