Chocolate Chip Cookies (Shortbread)

Ingredients

  • 2 cups butter, softened
  • 2 cups plus 3 tbs confectioners' sugar, divided
  • 2 tsp vanilla
  • 1/2 tsp salt
  • 4 1/2 cups flour
  • 1 pkg semisweet chocolate pieces

Preparation

Step 1

In bowl, cream butter and 2 cups confectioners' sugar. Beat in vanilla and salt. Gradually stir in flour until well blended; stir in chocolate pieces. Dough will be stiff. Shape in 1 inch balls: place 2 inches apart on ungreased baking sheet. Flatten with a fork to 1 1/2 inch rounds. Bake in a preheated oven at 350° for 15 minutes or until light golden. Remove to rack. While cookies are still warm, sprinkle tops with remaining 3 tablespoons confectioners' sugar stirred through a strainer. Cool.
