Ingredients
- Filling:
- 2/3 cup packed brown sugar
- 1/4 cup melted butter
- 4 tsp. cinnamon (or more, to taste)
- 1/3 cup raisins (optional)
- Dough:
- 2 cups all purpose flour
- 2 Tbsp. sugar
- 4 tsp. baking powder
- 1 tsp. salt
- 1/2 cup shortening or butter
- 3/4 cup milk
- Icing:
- 1/2 cup icing sugar
- 1 Tbsp. milk
- 1/2 tsp. vanilla
Preparation
Step 1
In small bowl, mix together brown sugar, butter, cinnamon, and raisins; set aside. In large bowl, combine flour, sugar, baking powder, and salt; mix thoroughly. Cut in shortening until mixture resembles coarse crumbs. Add milk all at once, stirring quickly with fork to make a soft, slightly sticky dough; don't overmix.
Turn out onto lightly floured surface, gather gently into ball and knead lightly about 10 times. Roll out dough to 10" square. Spread filling evenly over dough. Roll up; pinch edge to seal. With sharp knife, cut into 9 slices. (I use dental floss wrapped around dough in a loop, pulling to close the loop and make a neat slice.) Place in greased 8" square baking pan. Bake at 425°F for 15-18 minutes or until golden brown. Let stand about 3 minutes, then turn out onto rack. Glaze or drizzle with icing if desired.
Icing: For glaze, mix ingredients. Spoon over top of hot rolls, using back of spoon to coat evenly. Let cool slightly; serve warm.
For drizzle, increase icing sugar to 3/4 cup. Let rolls cool until just warm; drizzle icing over tops.
