Fish -Panko/Parm Crusted Halibut w/ Tomato Basil Sauce

Ingredients
- Sauce
- 2 Tbsp EVOO
- 2 cloves garlic chopped
- 1 large shallot chopped
- 1 pint cherry or grape tomatoes halved
- 5 basil leaves torn
- salt and pepper
- Fish
- 1/2 cup panko
- 1/4 cup grated parmesan
- 1 egg lightly beaten
- course black pepper
- 4 6 ounce halibut fillets
- Store bought balsamic drizzle for topping
Preparation
Step 1
Heat olive oil in skillet over medium heat. Add garlic and shallot and stir for a couple of minutes. Add the tomatoes and basil, season with salt and pepper and cook to break down the tomatoes 10 - 15 minutes.
While tomatoes cook mix panko, cheese and black pepper. Add fish to egg then panko. Heat a thin layer of EVOO in a large skillet over medium heat. Add fish and cook turning once until crisp and brown all over...8 - 10 minutes total.
Top fish with tomato sauce and balsamic drizzle...or serve separately if you have picky eaters.
