Ingredients
- 1 med head cauliflower cut into florets
- 2 L shallots thinly sliced
- 3 T extra virgin oil
- salt & pepper
- 2 t Dijon mustard
- 1 C fresh breadcrumbs
- 1/4 C golden raisins
Preparation
Step 1
Preheat oven to 425
On a rimmed baking sheet, toss cauliflower and shallots with 2 T oil
Salt & Pepper Roast 10 minutes. Whisk together the mustard and 1 T oil. Stir in breadcrumbs and raisins. Sprinkle breadcrumb mixture over cauliflower and roast until breadcrumbs are golden brown and cauliflower is tender about 10 more minutes
