Roasted cauliflower with shallots & golden raisins

Ingredients

  • 1 med head cauliflower cut into florets
  • 2 L shallots thinly sliced
  • 3 T extra virgin oil
  • salt & pepper
  • 2 t Dijon mustard
  • 1 C fresh breadcrumbs
  • 1/4 C golden raisins

Preparation

Step 1

Preheat oven to 425
On a rimmed baking sheet, toss cauliflower and shallots with 2 T oil
Salt & Pepper Roast 10 minutes. Whisk together the mustard and 1 T oil. Stir in breadcrumbs and raisins. Sprinkle breadcrumb mixture over cauliflower and roast until breadcrumbs are golden brown and cauliflower is tender about 10 more minutes
