- 3 whole eggs
- 1 cup milk
- 1 cup flour
Remove eggs from fridge and leave it in room temperature for at least 2 hours.
Whipped the eggs with a whisk and add the milk gradually. Let it sit and cover.
Spray muffin tins with cooking spray and add 1/2 tsp. of shortening (crisco or tender flakes lard) to each tin. Bake at 450 degrees till the shortening is bubbling.
Add the flour to the egg mixture with a fork, stirring well till blended.
Once the shortening is bubbling remove from oven and pour the batter mixture into the tin, 2/3 full and bake at 450 degrees for 15 minutes and lower to 400 degrees for 5 minutes.
