Ingredients

  • 1 shallot, minced (about 3 TB)
  • 2 TB dry white wine
  • 1/2 cup low-sodium chicken broth
  • 6 TB heavy cream
  • 3 TB grainy Dijon mustard (Grey Poupon Country Dijon)

Step 1

In pan, that steaks were cooked in, pour off all but 1TB of fat. Return skillet to low heat and add shallots.

Cook, stirring frequently until beginning to brown. Add wine, and increase the heat to med-high. Simmer rapidly, scraping up bits on bottom of the pan, until liquid is reduced to a glaze, about 30 seconds.

Add the broth, and simmer until reduced to 1/4 cup, about 3 minutes. Add the cream and any meat juice. Cook until heated through, about 1 minute. Stir in the mustard and season with salt & pepper.

Serve sauce over steak.
